Anise Myrtle - Ringwood (Syzygium anisatum)

This sparsely found, but beautiful, rainforest tree can grow up to 45 meters in the wild and its leaves are thick and durable. It boasts an aniseed like, sweet liquorice profile, which is great for flavourings while its superior antioxidant qualities make it popular for its healing abilities. As the flavour can be quite sharp and overbearing, it is used sparingly and is fantastic for seasoning rich dishes as a way to add depth a bit of spice.
