Bush Tomato (Akudjura - Desert Raisin)
In the dry hot regions of Australia where most would assume life could not exist, this desert fruit flourishes, especially after environmental stresses such as bush fires. With the Indigenous inhabitants utilizing this fruit for its high content of vitamin C and potassium, this temperamental ingredient needs to be respected as it can be highly toxic if not picked or handled correctly. Much of the edible product today is grown by Indigenous communities around Australia. Profiling a bold rich caramel flavour, I like using it to add depth and body to sauces.
